Stinging Nettle Creamy Pasta Sauce

Ingredients: (for 10 people)

lots of stinging nettle

Onion – 3 white onions, chopped finely

Butter – 50g

White wine – 200ml

Cream – 300ml

Garlic salt & native pepper

Parmesan cheese- 1 packet

 

Method

Prepare stinging nettle by cutting leaves from stem (using rubber gloves)

Saute onion in butter until translucent

Add nettle leaves, and saute until wilted

Add wine and bring to the boil

Simmer for several minutes

Add cream and seasonings, and bring back almost to the boil, then keep at a low simmer.

Pour over pasta.

Serve with parmesan shavings- (gluten free)
