Nel’s Chocolate Olive Oil Cake (GF)

Ingredients:

  • 2/3 cup olive oil

  • 6 tbsps cocoa powder (sifted)

  • 1/2 cup boiling water

  • 2 tsps vanilla extract

  • 1.5 cups almond meal

  • 1/2 tsp baking soda

  • pinch salt

  • 1 cup castor sugar

  • 3 eggs

    Directions:

    Preheat oven to 165 deg Celsius. Grease 23 cm springform pan with a little oil and line the base with baking paper.

    Sift cocoa powder into bowl and whisk in boiling water to a paste. Add vanilla.

    In another bowl, combine almond meal with baking soda and salt.

    With a mixer, combine sugar, olive oil and eggs and beat vigorously for three minutes until it looks like thickened cream. Turn down speed and add cocoa mix, and then add almond meal mix. Pour this batter into the prepared pan.

    Bake for 40-45 minutes

    Still in the pan, let it cool on a wire rack for 10 minutes.

    Ease it out of the pan. Let it cool on the rack completely or eat warm with icecream.
