Gyan’s Pearl Salad

Ingredients :

1 cup of Pearl Couscous 
1 punnet cherry tomatoes (cut into quarters )
3 tablespoons currants 
1 small diced red onion (diced)

Sauce:

3 tablespoons olive oil 
3 tablespoons vinegar 
Juice of one lemon 
¼ teaspoon of crushed garlic 
3 tablespoons parsley 

Additional:

Peas or beans 

Method:

Add boiling water to couscous and cook for 3 min, until soft but not sticky!
Mix all ingredients and mix in sauce at last minute.
